Strawberry Lime Spread

Every Memorial Day weekend we visit ancestral graves and gather with family for a barbecue and swim. The family requested that I make strawberry lime spread for the barbecue this year. It is easy and delicious, good for spreading on baguettes and also a great dip for fresh fruit. The proportions depend on how sweet and ripe the fruit is. Feel free to add or subtract accordingly.

Strawberry Lime Spread
4 oz. cream cheese, softened
2 Tbsp. crème fraiche
1 c. sliced strawberries
3/4 ripe red pear, peeled and sliced
3 Tbsp. sugar
1/4 tsp. grated lime zest
1 tsp. fresh lime juice or to taste
drop of vanilla extract
pinch of kosher salt

In a food processor pulse the cream cheese and crème fraiche together until smooth. In a separate bowl mix together fruit, sugar, lime zest and juice. Stir to mix well. Add to the food processor and pulse until smooth. Add vanilla and salt. Pulse again to mix. Pour spread into serving bowl. Cover and chill one hour. Spread on baguettes or use as a dip with fruit. Serves 8.
