This week in my CSA bag from La Nay Ferme, I got a beautiful bunch of pea shoots. One of my favorite side dishes is peas with mushrooms and garlic. I used pea shoots in place of regular peas and it was delicious. It goes well with any roasted meat or as a side with pasta.
Pea Shoots with Mushrooms and Garlic
3 Tbsp. extra virgin olive oil
4 cloves garlic, chopped
2 c. sliced baby portobello mushrooms
4 c. rinsed and chopped pea shoots, packed ( or 3 c. frozen petite peas)
salt and pepper to taste
Warm olive oil in a frying pan on medium heat. Add garlic and sauté 1 minute until it begins to soften. Add mushrooms and cook for 3 minutes until they begin to soften. Add pea shoots (or peas) and sauté for 5-6 minutes until pea shoots and mushrooms are tender. Season to taste with salt and pepper. Serves 4 as a side dish.
