It is going to be close to 100 degrees this week and that’s when it is nice to have something cool and refreshing to drink when coming in from the heat. I drink Rooibos tea all year long, but I particularly love it iced in the summer months. Rooibos is a South African herbal tea that has recently become popular. It is not only delicious but has health benefits as well; Rooibos has antioxidants and no caffeine. I purchase Rooibos tea in 1 lb. packages from San Francisco Herb Company. They sell plain Rooibos but they also sell a very nice Paradiso Red Rooibos, a fruity tropical flavored tea. I use sugar for sweetener but you can use honey and lemon if you prefer.
Iced Rooibos Tea
1/2 c. loose Rooibos tea leaves
6 c. boiling water
1/3 c. sugar or more to taste
Steep tea leaves in boiling water in a large bowl for 12 minutes. Strain, then pour into a heatproof pitcher. Add sugar to taste and chill 4-6 hours before serving. Makes 6 (8 oz.) servings.
