Garden Bounty – Zucchini (Farfalle with Creamy Zucchini Sauce)

I have more zucchini than I can use at the moment (doesn’t everyone?). This is a good, easy recipe for pasta and zucchini. This recipe uses Italian sausage. My mom makes her own Italian sausage patties and keeps me supplied with packages in my freezer. When I begin to run low I call her and she makes more for me. It is delicious sausage. Unfortunately, not everyone has an Italian mother who can do this for them. Use the best sweet Italian sausage you can find that contains whole fennel seeds. Also, use the best Parmesan cheese possible – no canned stuff please.

Farfalle with Creamy Zucchini Sauce
3 Tbsp. extra virgin olive oil
1 lb. sweet Italian sausage, out of the casing
2 cloves garlic, finely chopped
1 (14 oz.) can diced tomatoes, pureed
1/4 c. water
2 c. diced zucchini
1/2 tsp. kosher salt
Freshly ground black pepper to taste
2/3 c. heavy cream
1/4 c. freshly grated Parmesan cheese
4 large fresh basil leaves, chopped
1/4 tsp. dried Greek oregano or more to taste
1 lb. farfalle or bow tie pasta

Heat olive oil in a 5 quart saucepan. Add sausage, cover and cook until browned about 7 minutes. Add garlic and saute until soft but not brown, 2-3 minutes. Add tomato puree and water. Cover and cook 10 minutes. In the meantime, heat water for pasta in a 6-quart pot. Add pasta and cook for 11 minutes while the sauce is cooking. Stir sauce occasionally to keep from sticking. Add zucchini, salt and pepper and half of the chopped basil to the sauce. Cook 10-12 minutes until zucchini is just about fork tender. Add cream, cheese and oregano. Heat until cream is hot but not boiling hard, about 5 minutes. Serve over hot farfalle. Top with remaining chopped basil and a sprinkling of freshly grated Parmesan. Serves 6.
